Ceviche was once a dish found only by brave travelers in Peru who were willing to try something new. This delicious recipe has grown in popularity recently and there are now even restaurants specializing in all types of ceviches- including in CR!
Clean & cut Marlin into small cube size pieces and put into a mixing bowl
Chop onion and red pepper semi-fine and add to fish in the bowl
Pour lime juice on top of fish just to cover the top
Add small amount of sugar to taste; to balance the citrus acidity
Mix and let sit in the refrigerator for a minimum of 2 hours before serving
